Rocky Road Popcorn Recipe

This Rocky Road Popcorn is the ideal sweet and salty snack for movie night or whenever you crave something decadent. The combination of chocolate, marshmallows, and peanuts will satisfy your sweet tooth.

Ingredients

1 cup chopped peanuts
1/2 cup brown sugar
1/4 cup cocoa powder
1/4 cup corn syrup
1/2 tsp vanilla extract
1/2 cup popcorn kernels
1 cup chocolate chips
1/2 cup butter
1 cup mini marshmallows

Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

Instructions

Pop the popcorn kernels in an air popper or on the stovetop.
Melt the butter in a medium saucepan over medium heat.
In a saucepan, combine the brown sugar, corn syrup, cocoa powder, and vanilla extract.
To combine, stir everything together.
Bring the mixture to a boil and continue to cook for another 2-3 minutes, stirring occasionally.
Remove from the heat and pour the mixture over the popcorn.
Stir the popcorn until it is evenly coated.
To the popcorn mixture, add the mini marshmallows, chocolate chips, and chopped peanuts.
To combine, stir everything together.
Place the mixture on a baking sheet lined with parchment paper.
Refrigerate the baking sheet for 15-20 minutes, or until the mixture has hardened.
Serve the popcorn broken into pieces.
